A classically trained chef with 15 years in professional kitchens, Francesca stepped back from restaurant life after becoming a mum, turning her focus toward food that could be made closer to home. Her husband’s family farm in Tuscany had been lying dormant for years, so together, alongside Juri, their long trusted farmer, they brought the land back to life and achieved full organic status. Today, the farm produces a small range of high quality organic staples, with extra virgin olive oil and slow crafted pasta at its heart. Everything they make is rooted in the rhythms of their land, grown and harvested with care, and shaped by Francesca’s chef’s eye for flavour and simplicity.
