Caroline has spent a lifetime thinking about the ethics of fishing. In fact, she's built a whole livelihood around it. Working exclusively with small day boats of 10m and under in the South West, and forensically interrogating their catch methods and zones, Caroline is all about celebrating both the responsible consumption of fish and the preservation, regulation and regeneration of our precious marine environment. Her team is similarly committed and it shows in the quality of what they produce - filleting, curing and smoking fish to the highest possible standards.
