Wylde about...Çilbir.

‘Turkish eggs’ sound like the sort of thing that might feature in the Profanisaurus*.
 
They don’t, thankfully.
 
But I became obsessed with them earlier this year when I went down an Ottoman Empire rabbit hole.
 
And the Ottomans, it turns out, were obsessed with eggs. So much so, apparently, that the test for any wannabe chef was whether or not they could knock up a decent çilbir.
 
So, like a good dervish, I gave it a whirl.
 
First attempt - photo above - wasn’t bad, but there’s definitely room for improvement.
