Collection: James, Lyme Regis

While the rest of us are making our way to the office, by 0800 most mornings James is likely to be 20 to 30 metres underwater. He’s a scallop diver. Working the rich waters of England’s amazing Lyme Bay Marine Reserve from his boat ‘Grey Mist’, James spends up to an hour at a time collecting the finest examples of Britain’s sweetest seafood using nothing more than his hands. These first class scallops are then shucked and packed, ready for you to enjoy.
