Wylde about....Ajay.

Chef Ajay Kumar first caught my attention when he appeared on the brilliant Great British Menu.

I was struck by his extraordinary attention to detail, his intricate chutneys and his truly beautiful Indo-Scots accent.

So when Rachael and Jonny listed all their incredible organic goat meat this week, it was to Ajay that I turned.

His recipe for goat curry in the video below is an absolute stunner. You feel like you can almost smell the spices as you watch him prepare it.

I'll be making the dish next weekend, and I can't wait.
