It was in partnership with the Marina Bay Sands hotel in Singapore that Robbie cut his teeth in zero-waste agriculture, using by-products from the hotel’s kitchens to feed the urban farm he helped build directly underneath the iconic infinity pool. Since relocating back to his wife’s native North Cornwall, Robbie has teamed up with Tom and Ellie. Together, the co-operative puts their expertise to work growing king oyster, lions mane, shiitake and organic oyster mushrooms. Using a fabulous reusable container technique, with the mushrooms flourishing in sawdust enriched with alfalfa, these are the most sustainable (and tastiest) fungi you are ever likely to eat.
